Not really a seasonal recipe but you can use all your own produce and I thought it was so simple and tasty, the green chilli really adds a new dimension to the flavour. It makes a great breakfast alternative
1/2 onion, finely diced
2 tomatoes, roughly chopped
4 eggs, beaten
1 green chilli, deseeded and finely sliced
Sweat the onion in a little butter until soft, then add the tomatoes, chilli and eggs, keep stiring until nicely scrambled and the eggs are done to your taste (or cook as an omlette).
Great on toast or just on it's own.
