My best friend had been telling me about this one for years, but only tried it out 2 weeks ago!

Curried Parsnip Soup

1.5lbs parsnips, peeled, cored and chopped
1 large onion, sliced
1.5ozs butter
2 pts stock (chicken or vegetable)
1 tsp curry powder
0.5 teaspoon cumin
.25 pt single cream or creme freche

In a large saucepan, Fry onion in butter til soft 5-7 mins, then add the chopped parsnips.
Fry for another 3 minutes, turning frequently.
add curry powder and cumin (I found I'd prbably up the curry powder a little next time!) and fry for another 2 minutes, keep stirring!

Stir in the stock, and cook for about 35 mins until parsnips nice and soft.

Leave to cool, then blitz til all lumps are gone and stir in cream or creme freche. Re-heat but don't boil or cream may curdle. Eat in very large quantites!!!!!

Yummy!!
